English cucumber, cut lengthwise into quarters and sliced into 1/2 inch pieces
|
|
|

watermelon, cut into 1/2 inch cubes
|
|
|
| 1/4 |
teaspoon |
coarse salt
|
|
|
| 1/4 |

chopped green onions
|
|
|
| 4 |
ounces |
crumbled feta cheese
|
|
|

tablespoons |
fresh lemon juice
|
|
|
| 1 |
tablespoon |
olive oil
|
|
|
| 1/4 |
teaspoon |
coarsely ground black pepper
|
|
|
Directions:
Place cucumber and watermelon in a large bowl and sprinkle with coarse salt. Stir in green onion.
In a small bowl, stir together feta cheese, lemon juice, oil and pepper; add to cucumber watermelon mixture and stir gently.
Sprinkle with extra pepper if desired.
